Wine making and blending of wines

Wine growing and wine making are realized on the vineyard, each grape variety is being processed independently.

This year, four or five wines are being planned: a rosé wine elaborated with selected grape varieties of Cinsault, Syrah and Grenache; a light and fruity red wine which has to be drunk within the next two years elaborated with Cinsault, Syrah and Grenache and a well-structured red wine matured in oak barrels which will be commercialized within 12 to 24 months elaborated with Syrah, Grenache and Carignan.

According to the fermentation results, we are planning to produce wines of Pays d’Oc elaborated with a blend of Tempranillo, Cabernet Sauvignon and Syrah.

The final decisions concerning the blending of the wines are made at the end of the wine making process  and after a wine tasting with the staff of the vineyard.

Bottling of the rosé wine 2009 and the red wine 2008 (after a maturing of 12 months in oak barrels) will be in December  2009.
